282 people has its own post office, elementary school, veterinary clinic,
grocery store, a bar, an appliance repair service, this Municipal Auditorium
(& Senior Center), and 2 Lutheran churches.
This seems
to be a good opportunity to focus on the local food tradition, Lutheran hotdish, a
specialty at church potluck suppers and large family gatherings. Hotdish
is a kind of casserole that typically contains a starch such as noodles, a
meat, and a vegetable, mixed with canned soup. The most common meat is ground beef, and cream
of mushroom is the favorite canned soup.
This is real comfort food that fills many bellies and provides a

I grew up on

than pre-cooking noodles & making breadcrumb topping) or lower-fat
lower-salt more-vegetable casseroles (healthier, of course). I want to try a real traditional recipe, if
there is such a thing for something so basic.
